【Ingredients】: 750g lean pork from the hind leg, 60g rock sugar, 20g powdered rock sugar, 15g Chinese 13-spice blend, 30g ginger, 30ml aged rice wine, 20ml soy sauce, 10g curry powder, 20g salt, 10g dried scallop essence.Method: Blanch the meat in a pot, then remove and rinse. Return the meat to the pot with soy sauce, cooking wine, Chinese five-spice powder, water, ginger, salt, and rock sugar. Cover and simmer for about 1 hour (adjust based on meat size) until the liquid is nearly evaporated. Remove the meat, shred it into thin strips, then grind in a food processor.Heat a wok over high heat. Add the meat and stir-fry dry, maintaining even heat throughout. Finally, add powdered rock sugar, curry powder (for coloring, optional), and dried scallop extract. Continue stirring constantly until moisture fully evaporates and the meat becomes fluffy. Turn off the heat and let it dry using the residual heat of the wok. Stir-fry for approximately 30 to 50 minutes until done.
