Here are six foods you should never put in the microwave.

A new study published in the Norwegian journal Scandinavian Journal of Agriculture found that microwaving causes vitamin loss in asparagus. Broccoli. Broccoli is one of the most commonly microwaved foods.However, a study published in the Journal of Food and Agricultural Sciences found that microwaving broccoli reduces its antioxidant content by 97%. In contrast, cooking broccoli on a gas stove only reduces antioxidants by 11%.
Dried chili peppers. Capsaicin in dried chili peppers is volatile and unstable, making them prone to ignition during microwave heating.Chemicals released during microwaving can irritate the eyes and throat. Frozen fruit. A study in the Journal of Bioelectromagnetics found that microwaving frozen fruit to thaw it can cause healthy glucosides and galactosides to transform into carcinogens. The best way to thaw frozen fruit is to let it thaw naturally at room temperature.Garlic. A study published in the Journal of Nutrition found that microwaving garlic for just one minute destroys its active sulfur-containing allyl compounds, eliminating its cancer-fighting properties. Nutritionists remind us that microwaving most vegetables—especially leafy greens—can cause excessive nutrient loss, as vitamins like vitamin C are highly sensitive to heat and light.Meat, eggs, and staple foods experience less nutrient loss when microwaved.
