How to shell raw chestnuts

Chestnuts (scientific name: Castanea mollissima), also known as Chinese chestnuts, are plants belonging to the genus Castanea within the Fagaceae family. Native to China, they are distributed in Vietnam, Taiwan, and mainland China, growing at elevations between 370 and 2,800 meters, predominantly in mountainous regions. They are now widely cultivated. Chestnuts are highly nutritious, containing more vitamin C than tomatoes and over ten times more than apples.Chestnuts also provide a comprehensive array of minerals, including potassium, zinc, and iron. While their mineral content may not match that of hazelnuts, it significantly exceeds that of common fruits like apples. Notably, their potassium content is three times higher than that of apples.

Instead, they are notably high in starch.Dried chestnuts contain 77% carbohydrates, comparable to grains at 75%; fresh chestnuts also contain a substantial 40%, which is 2.4 times that of potatoes. Fresh chestnuts have a protein content of 4% to 5%, which is less than peanuts or walnuts but slightly higher than cooked rice.
Forty percent of chestnuts' carbohydrates are starch, and in fact, their starch content is twice that of potatoes. Fresh chestnuts are rich in vitamin C and potassium, and also contain folate, copper, vitamin B6, magnesium, and vitamin B1. Per 100 grams of fresh chestnuts, water accounts for 52%, with an additional 3 grams of protein and 44.2 grams of carbohydrates.Cooked chestnuts are rich in potassium and also contain vitamin C, copper, magnesium, folate, vitamin B6, vitamin B1, iron, and phosphorus. Per 100 grams of cooked chestnuts, 68.2% is water, along with 2 grams of protein and 28 grams of carbohydrates.However, chestnuts surpass grains in certain nutritional aspects. They are rich in vitamins B1 and B2, with vitamin B2 content at least four times that of rice. Each 100 grams also contains 24 milligrams of vitamin C—a level unmatched by grains. Few would expect that fresh chestnuts hold more vitamin C than tomatoes, widely recognized as a rich source, and over ten times that of apples!

The chestnuts we commonly eat are usually candied. Raw chestnuts have very hard shells. How do you shell raw chestnuts? Below are several methods for removing the shells from raw chestnuts.
After raw chestnuts ripen, place them under direct sunlight for several days. Once the moisture on the shell surface dries out, the shells will crack open on their own, making them easy to remove.
>If you have a microwave, make a small cut in each raw chestnut shell with scissors. Microwave them on high for one minute. After removing them, the shells will separate from the flesh. Place raw chestnuts in the freezer for two hours. Due to thermal expansion and contraction, the chestnut flesh shrinks and separates from the shell. You can then easily crack the shell by squeezing it with your hands.
Another thermal expansion method involves boiling raw chestnuts for 4-5 minutes, then immediately transferring them to cold water for a 5-minute soak. This repeated expansion and contraction causes the shell to separate from the flesh, making peeling effortless.
Another method involves boiling lightly salted water, immersing the chestnuts for five minutes, then removing them. This approach not only cracks the outer shell but also loosens the inner skin, allowing both to peel off effortlessly.
