Celery might seem an unexpected hotpot choice, but I've tried it and found it surprisingly good.Rich in coarse fiber, it promotes intestinal peristalsis, helping expel excess nutrients and metabolic waste from the gut—beneficial for weight loss and cleansing the digestive tract. Winter melon is popular in hot pot. High in water content and low in calories, it has pronounced diuretic properties, making it highly effective for cleansing the internal environment and weight management.
Spinach is a beauty-enhancing superfood, rich in iron and beta-carotene. It's also an excellent source of vitamin B6, folate, iron, and potassium. Spinach contains protein—0.5 kilograms of spinach provides protein equivalent to two eggs.

Here's a hotpot recipe especially suited for ladies:
Three-Delicacy Tofu Hotpot
Ingredients: 1250g soft tofu, 500g black fish, 25g dried shrimp, 250g stuffed pig's head, 50g rehydrated shiitake mushrooms, 150g winter bamboo shoots, 250g Chinese cabbage hearts.
Seasonings: 25g Shaoxing wine,salt 10g, MSG 5g, minced scallion and ginger 30g, lard 50g, meat broth 1250g. Preparation and Serving: 1. Cut the soft tofu into 3cm cubes. Place in an enamel bowl with a small amount of water and freeze at -18°C for 5 hours to make frozen tofu. Remove and thaw naturally before use.
2. Rinse bok choy and drain thoroughly. Peel bamboo shoots and slice into 3cm-long, 1.5cm-wide thin strips. Trim stems and caps from shiitake mushrooms, then rinse. Place dried shrimp in a bowl with 5g Shaoxing wine and 25g water. Steam for 30 minutes, then set aside.
3. Scale the black fish, gut it, remove the gills, wash thoroughly, and chop off the head. Remove the backbone to yield lean fish fillets. Slice into 3cm-long, 1.5cm-wide strips and place in a dish.
4. Heat a pot, add boiling water and frozen tofu. Once boiling, drain through a colander. Reheat the same pot, add lard, minced scallions, and ginger to stir-fry briefly. Deglaze with Shaoxing wine, then add meat broth and pork belly chunks. Cook until done, remove, and slice into 4.5cm x 1.5cm pieces.Place the black fish head and backbone into the original broth. Bring to a boil for 15 minutes, then strain out the fish residue using a sieve and discard it. Add shiitake mushrooms, sliced pork, dried shrimp, fish slices, frozen tofu cubes, and bamboo shoot slices. Bring to a boil again, skim off any foam, then season with salt, MSG, and Shaoxing wine. Pour the mixture into the hot pot. Finally, add the Chinese cabbage hearts and serve. Light the hot pot and enjoy.
