What soups to drink in autumn?
Autumn's dry climate calls for nourishing the body. Thus, soups that moisturize the lungs are ideal for this season.
Monk Fruit and Pork Lung Soup
Ingredients: 1 monk fruit, 1 pork lung, 2 slices of ginger.
Method: Wash and halve the luo han guo; hold the pig lung's trachea under running water until fully expanded. Squeeze out blood-tinged water repeatedly until the lung turns pink or white. Soak for 30 minutes, cut into pieces, and blanch.Heat a dry wok over high heat. Add the pork lung and stir-fry until all moisture evaporates. Remove and set aside. Pour an appropriate amount of water into an earthenware pot and bring to a boil. Add the lo han guo, pork lung, and ginger slices. Bring to a boil again, then reduce to medium-low heat. Simmer for one and a half hours. Season with salt to taste before serving.

Goji Berry and Pork Liver Soup
Ingredients: 50g goji berries, 400g pork liver, 2 slices ginger, a pinch of salt.
Method: Rinse goji berries in water. Wash pork liver and ginger separately. Slice pork liver; peel ginger and cut into 2 slices. First, add goji berries and ginger to an appropriate amount of water and boil vigorously for about 30 minutes. Reduce to medium heat and simmer for about 45 minutes, then add pork liver. Once pork liver is fully cooked, season with salt. Consume once in the morning and once in the evening.

Carp Soup
Ingredients: 1 carp, ginger, scallion whites, cilantro, cooking wine, vinegar, salt to taste.
Method: Gut and clean the carp, cut into two sections, and place in a clay pot. Wash and cut scallions into sections; peel and slice ginger, then add both to the pot. Add salt and cooking wine to taste, cover with water, bring to a boil over high heat, then simmer over low heat for 40 minutes. Finally, add a splash of vinegar and sprinkle with cilantro.

Codonopsis, Chinese Yam, and Pig's Trotters Soup
Ingredients: 20g codonopsis, 30g Chinese yam, 10g astragalus, 20g lotus seeds, 2 pig's trotters, 2000ml water.
Method: Rinse codonopsis, Chinese yam, astragalus, and lotus seeds. Blanch pig's trotters in boiling water, then rinse thoroughly. Place all ingredients in an earthenware pot, add sufficient water at once, bring to a boil, and simmer for 10 minutes. Reduce heat to low and continue simmering for one and a half hours. Season with salt to taste before serving.
