Steamed Sea Bass Method:
1. Score the fish with crisscross cuts. Marinate with salt, cooking wine, and pepper. 2. Stuff the fish cavity with ham, carrot, and ginger shreds.
3. Once the steamer water boils, place the dish in the steamer basket. Steam for 5–8 minutes (adjust based on fish size; avoid undercooking for tenderness).
4. Remove the steamed fish, drizzle with steamed fish soy sauce, and garnish with scallion and red pepper strips.Tips: 1. Keep the fish weight around 600 grams. This size looks appealing on the platter and is easier to cook through evenly.
2. When preparing the fish, sever the backbone from the belly cavity (using the heel of the knife to saw through) to prevent deformation caused by bone contraction during steaming. However, if you're inexperienced, skipping this step is acceptable to avoid damaging the fish before steaming.After cleaning the fish, evenly coat both sides with lard (vegetable oil works too), then lightly brush with white wine (you could also try spirits for a new flavor);
3. Mix about 50g of ham or minced meat with a little soy sauce, sesame oil, salt, minced ginger, and minced shiitake mushrooms. Stuff this mixture into the fish cavity. This enhances the flavor and helps fill out the belly, resulting in a plump, well-shaped steamed fish.
4. Take a large piece of old ginger and slice the longest section into uniform, attractive thin strips. Cut the middle section of a scallion (the part between the white and green, matching the ginger strips in length) into thin strips. (For visual appeal and to stimulate appetite) arrange these on the fish platter. After placing the fish on the platter, sprinkle some more ginger and scallion strips over the fish;
5. Only place the fish in the steamer once the water has reached a rolling boil (never steam fish in cold water—that would ruin everything. The secret to many steamed dishes is adding ingredients after the water boils);
6. Steam for 6-7 minutes, then turn off the heat (timing is the ultimate secret);
7. After turning off the heat, do not open the lid. Leave the fish in the steamer and let it "finish steaming" with residual heat for 5-8 minutes before removing. Immediately drizzle the prepared sauce (soy sauce, vinegar, light oil, and very little or no salt) over the fish (avoid MSG for a clean, fresh, and tender flavor). Garnish with a few sprigs of cilantro and serve.
