1. Rinse the shells of freshly purchased scallops under running water to remove sand.
2. Use a small knife (a Western-style table knife is recommended).Insert the knife into the shell to split it open, simultaneously severing the muscle attaching the meat to the shell. You'll now see meat attached to both sides of the shell.
3. Using the knife again, run it along the bottom edge of the shell to completely remove the meat. Ensure the knife stays flush against the shell's base to extract the meat intact.
4. Separate the meat from the shells. First, clean the meat by removing the dark-colored innards with the knife. Place the cleaned meat in a large bowl. Add a pinch of salt and soak for 2-3 minutes. Use chopsticks to gently swirl the meat clockwise. This causes any remaining sand on the surface to settle at the bottom of the bowl.
5. Remove the meat, discard the water from the bowl, add an appropriate amount of cornstarch, then place the meat back in the bowl. Gently rub the meat with your hands. The cornstarch will thoroughly remove any remaining sand. Finally, rinse the meat once more with clean water, and it's ready for use.
6. If preparing garlic-flavored glass noodles or steamed scallops with fermented black beans, the shells will serve as serving bases. Use a fine-bristled brush or toothbrush to thoroughly scrub away any remaining sand from the shells.
