They are smooth, pale green or reddish-brown, occasionally bearing sparse papillae.Leaves are heart-shaped with triangular bases, tapering to a point at the apex, and entire margins. Bract sheaths are short-tubular, obliquely truncate at the apex, and deciduous. Inflorescences are racemose or corymbose, terminal or axillary. The 5th-century BC Shennong's Classic of Materia Medica listed buckwheat among the Eight Grains.During the Tang Dynasty, buckwheat foods spread from China to Japan via Korea, evolving into over a hundred distinct preparations. Today, buckwheat and buckwheat noodles are immensely popular in Japan. Buckwheat fat contains nine fatty acids, with oleic acid and linoleic acid being the most abundant, accounting for 75% of total fatty acids. It also contains 19% palmitic acid, 4.8% linolenic acid, and other components. Additionally, it contains organic acids such as citric acid, oxalic acid, and malic acid.Buckwheat also contains trace amounts of calcium, phosphorus, iron, copper, zinc, and trace elements such as selenium, boron, iodine, nickel, and cobalt, along with multiple vitamins: B1, B2, C, E, P, and P (rutin). Among these, rutin and chlorophyll are not found in other cereal crops.The nutritional composition of buckwheat grains varies depending on the variety and cultivation conditions. Simultaneously, buckwheat possesses antibacterial and anti-inflammatory properties, earning it the reputation as the "anti-inflammatory grain."
1. Protein
The protein composition of bitter buckwheat differs from other cereal crops. It has higher levels of albumin and globulin, accounting for approximately 46.93% of total protein. Alcohol-soluble protein and gluten content are relatively low at 3.29% and 15.57%, respectively—only one-tenth and one-half that of wheat.Residual protein accounts for 34.32%, which is 12.7 times that of wheat flour (2.7%) (Table 3). This difference in protein composition between buckwheat flour and wheat flour results in distinct processing characteristics for flour-based foods. Buckwheat flour has very low gluten content, similar to legume proteins, and its total protein content is lower than that of rice, wheat, and corn.
2. Fat
Bitter buckwheat exhibits relatively high fat content (2.1%–2.8%), appearing as a solid substance at room temperature. It is yellowish-green and odorless, differing from typical cereal grains.The composition of buckwheat fat is favorable, containing nine fatty acids. The predominant components are highly stable, antioxidant unsaturated fatty acids—oleic acid and linoleic acid—which account for 87% of total fatty acids (Table 5).
Additionally, it contains stearic acid, myristic acid, and unidentified acids. Stearic acid accounts for 2.51%, and myristic acid for 0.35%. Fatty acid content in buckwheat varies by origin.
3. Starch and Dietary Fiber
Starch content in buckwheat grains differs by region and variety.Buckwheat starch resembles rice starch but features larger granules. Compared to typical cereal starches, buckwheat starch is more easily digested and absorbed by the human body.Vitamin B1 and Vitamin PP levels significantly exceed those in rice, while Vitamin B2 content is 1 to 4 times higher than in wheat flour, rice, and cornmeal. These vitamins promote growth, enhance digestion, and prevent inflammation. Buckwheat also contains Vitamin B6, with bitter buckwheat providing approximately 0.02 mg/g.
In recent years, the one-sided pursuit of "refined foods" has led to tables laden with rich meats and fish, while whole grains like buckwheat have nearly vanished. This trend undoubtedly contributes to the rising incidence of the aforementioned diseases. Each grain and legume offers distinct nutritional advantages. Buckwheat seeds, hulls, straw, and silage can all be used to feed livestock and poultry. However, crushed grains, bran, and hulls are most widely used as animal feed. Buckwheat crushed grains are a valuable feed, rich in fats, proteins, minerals like iron, phosphorus, and calcium, as well as various vitamins. Their nutritional value is about 70% that of corn.Reports indicate that feeding buckwheat grains to poultry increases egg production and accelerates chick growth; feeding it to dairy cows improves milk quality; and feeding it to pigs increases solid fat content and enhances meat quality. Buckwheat has a shorter growing season than other forage crops, allowing direct seeding in regions with short frost-free periods or relay cropping in areas with longer frost-free periods. It can provide large quantities of high-quality green fodder within a short timeframe.
Nectar Source Crop
Buckwheat ranks among China's top three nectar source crops. Sweet buckwheat features large flowers, abundant blooms, and a prolonged flowering period. Its well-developed nectaries emit a fragrant aroma and produce substantial nectar yields.Large-scale buckwheat cultivation promotes beekeeping and diversified farming while improving pollination rates. Placing hives in buckwheat fields can increase yields by 20–30% or more.

Buckwheat possesses a delicate, fragrant flavor and is a popular food in Northeast, North, Northwest, and Southwest China, as well as Japan, Korea, and the former Soviet Union.Buckwheat foods are directly processed from buckwheat grains and buckwheat flour. Buckwheat grains are commonly used for buckwheat rice, buckwheat porridge, and buckwheat flakes. Buckwheat flour, like other flours, can be made into noodles, pancakes, bread, pastries, buckwheat crackers, jelly, blood rice cakes, and sausages—all traditional regional delicacies.Japanese people greatly enjoy buckwheat noodles, with over 5,000 buckwheat noodle restaurants nationwide.
