Water chestnuts feature pure white flesh that is crisp and refreshing. They can be stir-fried, blanched, braised, stewed, or deep-fried.The famous Shaanxi vegetarian dish "Sweet and Sour Water Chestnuts," characterized by its pale yellow color, sweet-and-sour flavor, and crisp texture, is prepared by first blanching the water chestnuts in boiling water, then lightly frying them in hot oil, and finally cooking them in a sweet-and-sour sauce.
Beijing's "Rose Water Chestnut Cakes" are made by grinding water chestnuts into a fine paste, mixing with flour, forming into balls, deep-frying, then tossing in a separate pan with boiling water, white sugar, and rose water to create a sauce. The cakes are then poured into this sauce and drizzled with peanut oil.
This dish boasts a delicate, tender texture with a sweet flavor and a rich rose aroma.Water chestnuts can be prepared solo or paired with meats to create distinctive dishes like "Stir-fried Water Chestnuts with Shrimp," "Stir-fried Water Chestnuts with Chicken," "Braised Chicken with Water Chestnuts," "Water Chestnut Meat Rolls," and "Southern Water Chestnut Pancakes."
Modern scientific analysis reveals that water chestnuts contain abundant moisture, 21.8% starch, and 1.5% protein, along with calcium, phosphorus, iron, provitamin A, carbonic acid, and vitamins B1, B2, and C. Additionally, they contain heat-sensitive antibacterial compounds—water chestnutin—and effective anti-cancer components.
Experiments demonstrate that water chestnutin exhibits inhibitory effects against Staphylococcus aureus, Escherichia coli, Pseudomonas aeruginosa, and other pathogens. During traditional Chinese medicine screening, the Shanghai Tumor Prevention and Treatment Research Collaborative Group discovered that various water chestnut preparations inhibit tumor cells in animal models. The Singapore Journal of Chinese Medicine also reported local use of water chestnuts as an adjunct therapy for esophageal cancer.
