Peeled water chestnuts oxidize and discolor. To prevent this, store peeled water chestnuts in an airtight container or place them in a bowl covered with plastic wrap in the refrigerator.
Water-soaked refrigeration
Another method to prevent discoloration is to place peeled water chestnuts in a deep container, submerge them completely in water, and refrigerate the container.
However, this method may cause the flavor to diminish, so consume within one or two days.
Steamed Storage
Beyond fresh storage, peeled water chestnuts can be steamed or boiled, then dried thoroughly before refrigeration. For extended preservation, store cooked water chestnuts in the freezer.
Can Yellowed Water Chestnuts Be Eaten?
1. Peeled water chestnuts that have oxidized and turned yellow are still edible. After peeling, phenolic compounds oxidize into quinones, causing surface yellowing. These can be consumed as is or by removing the discolored parts before eating.
2.Water chestnuts that have turned yellow after peeling should ideally not be consumed. They may be affected by water chestnut blight, a disease causing yellowing, making them unsafe to eat.
3. If normally stored water chestnuts develop yellowing inside the shell over time, avoid eating them. This indicates spoilage and is harmful to health.
Precautions for consuming peeled water chestnuts
1. Nutrients in peeled water chestnuts continue to diminish over time, significantly reducing their nutritional value. Therefore, avoid storing peeled water chestnuts for extended periods and consume them promptly.
2. Do not store peeled water chestnuts alongside unpeeled ones. Since water chestnuts grow in muddy water, unpeeled ones carry substantial bacteria on their surfaces. Storing them together with peeled chestnuts risks contaminating the peeled ones. Keep them separate.
3. Water-preserved water chestnuts should be consumed within one or two days. Water leaches out beneficial components like sugars, minerals, water-soluble vitamins, and water chestnut alkaloids, making long-term storage inadvisable.
4. Discard any peeled water chestnuts showing yellow discoloration. This indicates either disease or spoilage.
Tip
Water chestnuts have a cold nature. Avoid excessive consumption—5 large pieces per serving is sufficient. Limit daily intake to no more than 100 grams to prevent bodily discomfort.
