Lotus root is a staple vegetable for many homemakers. It offers numerous health benefits. Freshly purchased lotus root can be used in cooking or paired with other foods. However, why does lotus root turn black before it's consumed? Let's explore why lotus root darkens.
At home, women often boil discolored lotus root in an iron pot, causing the broth to turn black as well. Is such lotus root still safe to eat?Actually, the darkening of boiled lotus root is related to the polyphenolic compounds it contains. These compounds share a common property: they can bind with iron ions to form purple or blue colored complexes. One of the abundant polyphenols in lotus root—gallic acid—forms a blue-black substance when it combines with iron ions.
Lotus root left in a vegetable basket without contact with iron utensils also turns black due to these polyphenols. Under the action of polyphenol oxidase (PPO), the polyphenols in lotus root oxidize into chemicals called "quinones." These quinones then polymerize together to form melanin. In fact, this same mechanism causes sliced apples to turn brown and bananas stored in the refrigerator to become dark.
Therefore, as long as your lotus root is fresh, it remains edible even when discolored. However, the sight of dark broth and blackened lotus root can be unappetizing. Is there a way to keep it white?
Maintaining lotus root's whiteness is actually quite straightforward. Blanching it in boiling water at 100°C for 70 seconds deactivates all polyphenol oxidase, halting the conversion of polyphenols into quinones. However, this method is likely only suitable for dishes like braised lotus root with pork ribs, where a soft, tender texture is desired. If you use this method for cold lotus root slices, they won't turn black, but they'll also lose their crisp texture.
Besides high-temperature treatment, adding acidic substances can also inhibit polyphenol oxidase. When preparing cold lotus root slices, immediately adding vinegar to the blanched slices significantly inhibits polyphenol oxidase activity, preserving the lotus root's white color. In fact, some ready-to-eat packaged lotus root slices contain substances like citric acid to suppress polyphenol oxidase activity.
What about fresh lotus root bought but not consumed immediately? Keeping it white isn't difficult either. Although polyphenol oxidase has strong catalytic activity, it requires oxygen for the phenolic compounds in lotus root to oxidize into quinones. Therefore, isolating it from oxygen is another method. Simply soaking the lotus root in water can slow down the browning process.
Does this put your mind at ease? Actually, lotus root that turns black after a few days of storage is still edible. However, it's best not to store it for too long. If left too long, the lotus root loses freshness, and consuming it at this stage can be harmful to your health.
That concludes our explanation of why lotus root turns black. We hope this information proves helpful. Wishing you good health and smooth sailing this winter.
