Pre-Soaking Method
The night before cooking red beans, soak them in clean water overnight. During hot weather, refrigerate them for soaking. After rinsing the soaked beans, bring them to a boil over high heat, skim off the foam, then simmer on low heat. The beans will soften quickly—using a pressure cooker speeds up the process.
Fully soaked red beans can also be cooked this way: After boiling, simmer for about 1 minute before turning off the heat. Keep the lid on and let them steam until the water cools completely—they'll be tender. This method saves a lot of energy. The downside is that some nutrients are lost, and the red bean paste made from beans soaked for too long won't be as vibrantly red. If you plan to make red bean paste, it's best not to use this method.
Boil-and-Soak Method
Rinse unsoaked red beans. Add them to boiling water, bring to a boil again, then simmer for 3–5 minutes. Turn off the heat and let them soak for about 30 minutes. After 30 minutes, reheat and cook for another 10+ minutes until tender. This method preserves nutrients well and saves energy. Using a pressure cooker yields even faster results.
Repeated Simmering Method
This method suits those with ample time. It's time-consuming but energy-efficient. After rinsing the beans, place them directly in the pot. Bring to a boil, let cool, then reheat. Repeat this process up to three times until the beans are tender.
An alternative variation: Place beans in a pot with minimal water. Bring to a boil, add a small amount of cold water, return to a boil, and repeat this process several times until the beans split open.
Dry-Roasting Steaming Method
Place beans in a pot without oil. Dry-roast over low heat until they turn slightly golden and release their aroma. Adding water at this stage makes them cook tender much more easily.
Freezing Method
Rinse the red beans, then soak them in water until fully submerged for about 30 minutes until the beans absorb all the water. Divide them into small bags and place them in the freezer. When needed, take them out and they'll soften quickly with just a little cooking.
Pressure Cooker Method
Place washed red beans in a pressure cooker. Bring to a boil over high heat, then reduce to low heat and cook for 15 minutes until tender. Alternatively, after boiling, switch to low heat for 5 minutes, turn off the heat, and let sit until tender. This method saves energy but takes slightly longer.
Additional Notes:
1. Regardless of the cooking method, fresh red beans from the current year cook more easily than older beans, which require longer cooking times.
2. Red beans come in many varieties, each with varying degrees of hardness when cooked.Additionally, most red beans can be cooked in a regular pot, pressure cooker, slow cooker, or crockpot. However, one variety requires a pressure cooker to achieve tenderness.
3. When cooking red beans in a covered regular pot, leave a small gap for steam to escape to prevent boiling over.
