Red Oil Shredded Beef Tripe: Soak tripe in warm water, then rinse thoroughly. Slice diagonally into strips. Bring water to a boil in a pot, blanch tripe, then remove and submerge in ice water. Drain well. In a bowl, combine 2/3 teaspoon salt,soy sauce, vinegar, sugar, chicken bouillon powder, sesame oil, chili oil, shredded red peppers, cilantro, sesame seeds, and crushed peanuts. Toss with the tripe until well combined.
Braised Beef Tripe: Rinse tripe and boil until 80% tender. Drain and slice. Slice shiitake mushrooms and bamboo shoots.Heat oil in a wok over low heat. Stir-fry fermented black beans and Sichuan chili paste until fragrant and oil turns red. Add ginger slices and onion, stir-fry until aromatic. Add tripe slices, shiitake mushrooms, and bamboo shoots. Pour in cooking wine, then soy sauce and stir well.Add the tripe slices, pour in enough water to cover, add a pinch of sugar, splash in a few drops of rice vinegar, and sprinkle in a little MSG.
