Water that's too cold won't extract the lemon's aroma effectively.Using boiling water, however, will extract more bitter compounds like hesperidin. Some worry that high temperatures may destroy vitamin C, but lemons are highly acidic, and vitamin C is heat-resistant in acidic conditions, so it's not easily lost.
