The Song Dynasty poet Su Shi vividly described spring leeks in his verse: "I feel the east wind's chill grow sharp, / As green mugwort and yellow leeks grace the spring platter." Beyond this poetic portrayal, leeks possess numerous names. They are also called grass milkwort, yang-raising herb, longevity grass, and flat vegetable. The medicinal use of leeks dates back to the Spring and Autumn and Warring States periods. The Compendium of Materia Medica records: "Leeks nourish the liver and kidneys, warm the waist and knees, and strengthen yang while securing essence." The Illustrated Compendium of Materia Medica states: "Among vegetables, this plant is most warming and beneficial to health; it should be consumed regularly."
Folk medicine employs leeks in numerous therapeutic ways. Below are several leek-based recipes:
1. Leek Porridge
50g fresh leeks, 10g leek seeds (ground into fine powder), 100g japonica rice, a pinch of fine salt. First, cook the japonica rice into porridge. When the porridge is nearly done, add the leeks (washed and chopped) or leek seed powder and fine salt. Simmer briefly before serving.
Benefits: Tonifies the kidneys and strengthens yang energy, consolidates essence and stops seminal leakage, fortifies the spleen and warms the stomach.
II. Stir-Fried Leeks with Eggs
100g fresh leeks, washed and chopped; 3 eggs (shelled). Beat eggs with chopped leeks until well combined. Stir-fry with vegetable oil and salt until cooked through. Serve as a side dish.
Function: Warms the middle burner, nourishes blood, and warms the kidneys and lower back.
III. Stir-Fried Leeks with Fresh Shrimp
150g leeks, 250g fresh shrimp (shelled). Stir-fry until cooked and serve as a side dish.
Function: Tonifies the kidneys and nourishes essence, strengthens yang, and treats impotence. This dish is drying and heat-inducing; those with robust yang energy should avoid it.
IV. Leek-Ginger Milk Drink
250g leeks, 25g ginger. Wash, chop finely, and mash. Strain juice through clean cheesecloth. Place in pot, add 250g milk, bring to boil, and consume while hot.
Function: Warms the middle burner, descends qi, harmonizes the stomach, and stops vomiting.
Important Note: Contraindications for Consuming Leeks
Honey: Leeks should not be consumed with honey. Both leeks and honey belong to the same family (Allium genus, Liliaceae family), sharing pungent, warm, and heating properties. They contain allicin and sulfur compounds, which are incompatible with honey's nature. Therefore, they should not be eaten together.
White Liquor: White liquor is sweet, pungent, and slightly bitter with a highly heating nature, containing ethanol. Alcohol is irritating, dilates blood vessels, accelerates blood flow, and may trigger gastritis or gastrointestinal ulcer recurrence. Chinese chives are warm and sweet, promoting yang energy and blood circulation. Consuming raw chives with white liquor is like adding fuel to the fire. Long-term consumption is especially detrimental for patients with bleeding disorders. Therefore, avoid consuming white liquor with leeks.
Spinach: Leeks should not be eaten with spinach, as this combination has a laxative effect and may cause diarrhea.
Since leeks are difficult to digest, they should not be consumed in large quantities at once. Generally, those with weak stomachs, internal heat, lower body heat, or poor digestion should avoid leeks.
