Steps:
1. Carefully scrape off all hair from the pig's trotter. Wash thoroughly, then boil in water. Once boiling, skim off the scum and set aside.
2. Peel the papaya, cut it open, remove the seeds, and dice into chunks. Set aside.
3. Bring a pot of water to a boil. Add the pig's trotter and ginger (peeled and smashed). Boil vigorously, then reduce to medium-high heat and simmer for about 30 minutes. Lower to medium-low heat and simmer for another 45 minutes. Add the diced papaya. Bring to a boil again, then simmer on medium-low heat for about 30 minutes until the pig's trotter is gelatinous and the papaya is tender.
4. Before serving, sprinkle with chopped scallions and season with salt to taste.
