One type is made by grinding fermented rice into flour, commonly known as sour-fermented rice noodles. This method involves complex craftsmanship and a lengthy production cycle. Characteristics: The noodles possess excellent elasticity, a smooth texture with a subtle sweetness, and retain the pure fragrance of rice—a traditional production approach. The other type involves directly extruding ground rice flour through machinery, relying on friction heat to gelatinize the rice paste into shape, termed dry-extruded rice noodles.Dry noodles are sun-dried for portability and storage. They are steamed or boiled to rehydrate before consumption. These noodles are firm, chewy, and long-stranded but lack the distinct rice aroma. II. Preparation Method for Yunnan Crossing-the-Bridge Rice Noodles Ingredient Formula:
Premium indica rice (quantity as needed for noodle production), pork ribs, large bones, whole chicken, whole duck, ham (for broth ingredients), fresh pork tenderloin, fresh fish, corn flakes, wood ear mushrooms, tofu skin, scallions, cilantro, sesame seeds (for bridge-crossing fresh ingredients), ground pepper, MSG, salt.
Method:
1. Place rice in a wooden tub, soak in cold water for 30 minutes. Drain thoroughly. Grind rice into flour using a mill or grinder.
2. Mix the rice flour with cold water to form dough. The water-to-flour ratio should allow the dough surface to naturally form a smooth plane after mixing, with no lumps and a consistency slightly thinner than glutinous rice dough for yuanxiao.After 15 minutes, the rice noodles are ready. Let the main strands air-dry for 24 hours to rehydrate, then soak in water to separate them.
4. When ready to serve, place the rice noodles in a pot and boil for about an hour until cooked through. Soak in cold water for half an hour to separate them, then drain and serve in bowls.
Soup Preparation Method:
Chop pork ribs into chunks and break large bones. Simmer together with chicken, duck, and ham until cooked. Bring to a rapid boil, then reduce to a gentle simmer—avoid overcooking ingredients to the point of disintegration. Remove ham early; separately remove chicken and duck for use in cold platters. Continue simmering large bones to extract bone marrow and dissolve calcium.Season the broth with pepper, MSG, and salt. Salt alone is also acceptable.
Fresh Ingredients Preparation:
Select freshwater fish with tender, non-fishy flesh. Clean thoroughly and slice into extremely thin sashimi. Arrange alongside paper-thin slices of fresh pork tenderloin on a large platter. Place tofu skin, corn kernels (or fresh bamboo shoot slices),and rehydrated wood ear mushrooms. Finely chop cilantro and scallions (or other fresh garnishes like pea shoots), and sprinkle toasted sesame seeds into the soup bowl.
To serve, arrange the rice noodles, soup bowl, and fresh toppings separately on three plates. Transfer the fresh toppings to the hot soup bowl (the soup surface must have a layer of oil to keep it hot) to blanch them. Then, add them to the rice noodles and enjoy.
III. Rice Noodle Storage
Storing sour-fermented rice noodles is most inconvenient, with an extremely short shelf life. Traditionally, they are kept in bamboo baskets covered with damp towels. This setup allows ventilation through the basket while the damp towel releases moisture to maintain humidity, preserving the noodles for 18–24 hours.Beyond this timeframe, they become brittle or dry and hard, making them difficult to eat. When handling the noodles, moisten your hands with warm water to prevent sticking.In the film Flower Waist Bride starring Zhang Jingchu, a scene depicts rice noodle production: fermented, hot ingredients are poured into an old wooden mold with a press handle. Pressing down forces the noodles through holes beneath the wood. After rinsing and cooling, fresh noodles are ready to eat.

High-quality rice noodles offer superior nutritional benefits. Rich in carbohydrates, vitamins, minerals, and enzymes, they cook quickly and evenly, withstand prolonged boiling without disintegrating, boast a smooth, tender texture, keep broth clear after cooking, and are easily digestible. They are particularly well-suited for hot pot and casual fast food.Note: Nutrients can leach out during soaking, so pair rice noodles with vegetables, meat, eggs, and toppings to enhance nutrition. Seasonings also elevate flavor. Claims that eating rice noodles equals consuming a plastic bag lack scientific basis—unless the noodles are counterfeit.
