Thin-skinned varieties may also be treated with a 0.5% sodium carbonate solution or a sodium carbonate-sodium hydroxide mixture for 3–6 seconds. Immediately rinse thoroughly with clean water after alkali treatment. This process reduces drying time by 8–10 days.
4. Sun-Drying: Spread grapes on drying trays and sun-dry for approximately 10 days. When the surface begins to dry, turn the entire batch. Place the slightly wetter grapes on the top layer to continue drying. Once two-thirds of the fruit appears dry and no grape juice seeps out when squeezed by hand, stack the trays and air-dry in the shade for one week.Under clear weather conditions, the total drying period is approximately 20–25 days.
