Where does Mapo Tofu originate? Sichuan Mapo Tofu boasts a long history and enjoys high acclaim both domestically and internationally. Sichuan, historically known as Bashu and hailed as the "Land of Abundance," lies along the upper reaches of the Yangtze River. Its mild climate, abundant rainfall, mountainous terrain, and crisscrossing rivers make it fertile for grain and oil crops.with vegetables and fruits available year-round. The region boasts a full range of domesticated livestock and poultry, while its mountains and deep valleys yield wild delicacies like bear, deer, antelope, roe deer, white fungus, cordyceps, and bamboo shoots. Rivers and lakes provide fish such as yellow croaker, Ya fish, rock carp, and Chinese sturgeon. This exceptional natural environment and abundance of specialty resources have provided ideal conditions for the formation and development of Sichuan cuisine.Mapo Tofu stands as one of Sichuan's renowned traditional Han Chinese dishes and a signature dish within Sichuan cuisine, one of China's Eight Great Culinary Traditions. Primarily composed of tofu, its defining characteristics are encapsulated in the eight-character maxim: numbing, spicy, piping hot, fragrant, crispy, tender, fresh, and lively. Key ingredients include tofu, minced beef (or pork), chili peppers, and Sichuan peppercorns.The numbing sensation comes from Sichuan peppercorns, while the spiciness stems from chili peppers, highlighting the signature "numbing and spicy" characteristic of Sichuan cuisine. This dish was created around the early years of the Tongzhi reign (after 1874) during the Qing Dynasty by Mrs. Chen Liu, the proprietress of a small restaurant named "Chen Xingsheng Restaurant" near Wanfu Bridge in the northern suburbs of Chengdu.As Mrs. Chen had pockmarks on her face, she was known as Chen Mapo (Mrs. Pockmarks). The braised tofu she invented thus became known as "Mapo Tofu." Mapo Tofu Recipe Ingredients: 200g tofu 100g ground beef 15g green garlic 20g broad bean paste 10g Sichuan peppercorns 5g gingersoy sauce 10g, sugar 5g, beef broth (or water) 150g, oil 75g
Cooking Steps:
1. Cut tofu into 2cm cubes. Blanch in boiling water with a pinch of salt to remove bean odor. Drain and soak in cold water.
2.Dry-roast 10g Sichuan peppercorns in a pan (no oil needed) until fragrant; crush into powder and set aside.
3. Dice beef, mix with a splash of cooking wine, light soy sauce, and white pepper. Marinate for 15 minutes. Toss with cornstarch before cooking.
4.Finely chop the bean paste, mince the green garlic and ginger. Heat oil in a wok, add beef cubes, and stir-fry until golden brown. Add bean paste and stir-fry together;
5.Add minced ginger, soy sauce, and chili powder. Stir-fry until the oil turns red. Pour in 100g of meat broth (or water) and add the tofu. Simmer for 3 minutes.
6. Just before serving, stir in Sichuan pepper powder. Finally, sprinkle with minced green garlic.
