Mung bean sprouts, the tender shoots produced when mung bean seeds are soaked and germinated, are the edible part primarily consisting of the hypocotyl. During germination, vitamin C content in mung beans increases significantly, and some proteins break down into various essential amino acids, reaching up to seven times the original mung bean content. Thus, mung bean sprouts possess greater nutritional value than whole mung beans.Mung bean sprouts possess high medicinal value. Traditional Chinese medicine considers them cool in nature and sweet in taste. They not only clear summer heat, unblock meridians, and neutralize toxins but also nourish the kidneys, promote urination, reduce swelling, tonify yin and yang, regulate the five viscera, beautify the skin, dispel damp-heat, lower blood lipids, and soften blood vessels.
How to sprout mung beans properly? The process is quite simple, though many details might be overlooked. A step-by-step guide makes it easy to understand.
Watching tiny beans sprout tender shoots in just a few days is truly delightful. Homegrown mung bean sprouts are pure and natural, offering a uniquely satisfying taste.How to sprout mung beans yourself? Here's how!
Tools:
Since mung bean sprouts cannot be exposed to sunlight during germination—sunlight causes them to turn pink and develop a bitter taste—you'll need an opaque teapot, kettle, or other opaque container with a lid.
Mung beans.
Steps:
Soak the mung beans overnight until they swell (or soak them before leaving in the morning; you can start sprouting when you return in the afternoon);
Spread a single layer of the soaked beans evenly across the bottom of the teapot (don't use too many—they'll multiply significantly during sprouting);
Drain the water, cover the container, and place it in a warm spot. The moist environment inside will encourage sprouting (ensure adequate humidity without submerging the beans);
Every 4-6 hours, rinse the beans with clean water. Remember: Always pour water in through the spout and drain it out through the spout. This ensures the beans remain in the dark throughout the process (resist the urge to peek under the lid too often!);
Mung beans sprout quickly. On the first day, tiny sprouts will appear. By the second day, they'll be about 2-3 cm long. By the fourth day, they're ready to harvest.
Rinse off any floating bean skins with clean water. Blanch the sprouts in boiling water, then season to taste with minced scallions, ginger, chili, salt, sugar, vinegar, and sesame oil.

Compendium of Materia Medica: Among all bean sprouts, most are tough and unpalatable. Only mung bean sprouts are uniquely tender and white. Though common today, they were unknown to ancient times. However, they absorb damp-heat and stagnant energy, thus causing skin eruptions and agitating qi—slightly differing from mung beans' nature.
Mung bean sprouts are generally suitable for most people, particularly beneficial for long-term smokers.However, those with weak constitutions should avoid excessive consumption. When stir-frying, use a hot pan and quick cooking to minimize vitamin C loss. As mung bean sprouts are cold in nature, add a little shredded ginger during cooking to balance this property. Adding a splash of vinegar while stir-frying helps retain vitamin B1 and enhances weight-loss effects.
