Sweet Potato and Mung Bean Porridge — Strengthens the Spleen and Nourishes the Stomach
Ingredients
Sweet potato (1), japonica rice, glutinous rice, mung beans (ratio: japonica rice > glutinous rice > mung beans), water
Method
1.Combine japonica rice, glutinous rice, and mung beans (no need to soak mung beans as quantity is small). Add three times the volume of water and bring to a boil over medium-high heat.
2. Once boiling, reduce heat to medium-low (adjust power level on induction cookers). After 20 minutes (cooking time may vary by stove), add diced sweet potato (about the size of a mahjong tile) and continue simmering. When sweet potato softens and porridge thickens to a sticky consistency, it's ready. Add more water for a thinner consistency.
