Ingredients: 140g bitter melon, 3 eggs, shiitake mushrooms (as needed), garlic (as needed), onion (as needed), pepper (as needed), salt (as needed), 2 tbsp cooking oil
Instructions:
1. Prepare bitter melon, rehydrated shiitake mushrooms, eggs, onion, and garlic.
2. Wash bitter melon, remove seeds, and slice;slice the mushrooms; shred the garlic and onion. Set aside.
3. Beat the eggs, season with salt. Heat oil in a wok, pour in eggs and scramble lightly. Remove and set aside.
4. In the same wok, sauté onion and garlic in remaining oil until fragrant. Add bitter melon and stir-fry.
5. Add mushrooms and salt, stir-fry to combine.Pour in the eggs, add pepper, and stir-fry until combined. Adjust seasoning and transfer to a plate.
Stuffed Bitter Melon
Ingredients: 500g bitter melon, pork (as needed), green and red peppers (as needed), light soy sauce (as needed), oyster sauce (as needed), salt (as needed), potatoes (as needed), sugar (as needed)
Method:
1. Mince the pork. Dice the green and red peppers.
2. Slice the potatoes and steam or microwave until tender. Mash with a spoon.
3. Wash the bitter melon, cut into sections, and scoop out seeds with a small spoon.
4. Bring water to a boil in a pot. Blanch the bitter melon sections.
5. Heat oil in a pan. Add minced pork and stir-fry until separated. Pour in a sauce made with light soy sauce, oyster sauce, and sugar.
6. Add diced green and red peppers. Season with a pinch of salt and stir well.
7. Transfer the blanched bitter melon to ice water.
8. Mix the minced pork into the mashed potatoes until well combined.
