Recently, the People's Guotai Professor Workstation, in collaboration with Professor Luo Yongkang's team from China Agricultural University and People's Guotai's research team, published an article in the top international food science journal"Purification and identification of novel antioxidant peptides from silver carp muscle hydrolysate after simulated gastrointestinal digestion and transepithelial transport."This study aimed to develop novel antioxidant peptides from silver carp muscle and simulate gastrointestinal digestion and transepithelial transport. Results indicated that hydrolysates induced by alkaline protease and papain exhibited high antioxidant activity both before and after simulated gastrointestinal digestion in vitro.Preparation, Identification, and Study of Antioxidant-Functional Fish Protein Peptides in Gastrointestinal Digestion
This research project hydrolyzed silver carp proteins, employing a comprehensive antioxidant evaluation system and an in vitro GID model. It also utilized a Caco-2 monolayer adsorption model to study the antioxidant activity, gastrointestinal digestion stability, and bioavailability of different hydrolysates. Subsequently, LC-MS/MS was used to further analyze and identify the amino acid sequences of these antioxidant peptides.This provides novel insights for developing natural antioxidant functional products in aquatic foods and enhancing the high-value utilization of silver carp.
Additionally, Professor Luo Yongkang's team collaborated with the People's Republic Peptide Research Team to publish the article "Purification and Characterization of Antioxidant Peptides from Yak Bone Hydrolysates and Evaluation of Cellular Antioxidant Activity" in the international flagship journal Journal of Food Science and Technology.(Bos grunniens) bone hydrolysates and evaluation of cellular antioxidant activity." The study investigated the in vitro antioxidant properties of peptides derived from yak bone hydrolysates. Results indicated that yak bone peptides exhibit strong antioxidant activity, positioning them as a novel natural antioxidant product with potential application value.
Purification, Characterization, and Antioxidant Function Study of Yak Bone Peptides
The experiment employed papain and alkaline protease to hydrolyze yak bones for antioxidant peptide production. In vitro simulated gastrointestinal digestion experiments were conducted to investigate the free radical scavenging capacity, total reducing power, ferrous ion chelation ability, and hydroxyl radical scavenging capacity of yak bone antioxidant peptides.Results demonstrated that yak bone hydrolysate exhibits potent antioxidant properties, making it suitable for application in various antioxidant functional foods.
