As the saying goes: Breakfast is the most important meal of the day, providing energy for the entire morning. However, most people have limited time in the morning, so breakfast must be quick yet nutritious. Below are a few options I often enjoy:
I. Egg and Ham Sandwich
Ingredients: 3 slices of whole wheat bread, ham, eggs, lettuce or cucumber or tomato, salad dressing or mayonnaise
1.Fry the eggs. 2. Slice the ham. 3. Slice the tomato or cucumber. 4. Layer the ingredients. 5. Spread salad dressing on the vegetable layer. 6. Cut diagonally and serve.
Simple method:
1. Boil eggs, peel, and dice finely
2. Dice cucumber or other preferred vegetables
3. Mix diced eggs with mayonnaise, salt, and pepper until well combined
4. Trim crusts from toast, spread filling evenly, top with another slice, press gently, cut diagonally, and serve.
III. Tomato and Egg Drop Soup
This recipe is also quick and easy, but mastering a few key points is essential. Here's how:
1. Dice tomatoes, finely chop lettuce, and beat one egg into a liquid mixture. Set aside.
2. Sauté chopped scallions in a pan, add diced tomatoes, and stir-fry. Add a pinch of sugar, stir-fry briefly, then add water and bring to a boil.
3. While the water boils, prepare the dumplings: Pour flour into a bowl, add one beaten egg, and slowly stir clockwise. Gradually knead the flour into small dumplings. Add water as needed. This step is crucial—it may be tricky at first, but you'll get the hang of it after a few tries.
4. Add the dumplings to the pot and boil over high heat for 2-3 minutes. Pour in the beaten egg mixture slowly while stirring continuously to create egg flowers.
5. Add the chopped lettuce garnish, season with salt, turn off the heat, and serve immediately.
