Braised Soft-Shelled Turtle with Shiitake Mushrooms
Main Ingredients: Soft-shelled turtle 500g;
Supporting Ingredients: Fresh shiitake mushrooms 50g, chicken breast 50g, winter bamboo shoots 25g, ham 50g;
Seasonings: Cooking wine 10g, salt 4g, MSG 2g, scallions 15g, ginger 5g,2g ground black pepper;
Method:
1. Slaughter the soft-shelled turtle. Blanch in boiling water until the outer layer turns white and wrinkled. Remove and place in warm water. Scrape off the membrane with a knife. Chop off the tail and head. Pry open the shell, remove the entrails, wash thoroughly, and chop into two pieces. Blanch in boiling water, remove, wash again, and scoop out the fat from the four legs.
2. Mince chicken breast into a paste in a bowl, mixing thoroughly with chicken broth. Blanch ham slices, bamboo shoot slices, and shiitake mushrooms separately in boiling water, then drain.
3. Place the soft-shelled turtle pieces in a dish, add cooking wine, scallion segments, and ginger slices. Steam until tender. Remove, thoroughly debone, and place the turtle meat in a clay pot. Pour in the chicken paste. Neatly arrange the ham slices, bamboo shoot slices, and shiitake mushrooms on top. Add scallion segments, ginger slices, cooking wine, salt, and pepper. How to prepare Delicious Stewed Soft-Shelled Turtle with Goji Berries:
