Ingredients: Cucumber, garlic, dried chili peppers, spicy-sour sauce, rice vinegar, sesame oil, salt
Method
>1: Wash cucumbers, trim ends. Place two chopsticks on either side of cucumber, lay flat. Slice diagonally without cutting through (chopsticks prevent accidental cutting). Flip cucumber and slice same way (uncut side up). After slicing, sprinkle salt evenly and marinate for about 30 minutes. Drain excess liquid.
2: Crush garlic cloves and mince. Finely chop dried chili peppers and sprinkle over cucumber slices. Drizzle with rice vinegar (white vinegar works too), then add spicy-sour sauce and sesame oil.
Cucumber Juice
Ingredients: 2 cucumbers, 6-8 ice cubes
Method
1.Cut cucumbers lengthwise and juice directly in a blender.
2. Pour into a glass filled with ice cubes. Done.

Pounded Cucumber
Ingredients: Tender cucumber, 1.5 tbsp light soy sauce, 1 tsp salt,1 tbsp honey, 1 tbsp white vinegar (or juice of 1 lime), sesame oil, dried chili flakes, minced garlic
Method
1. Mix 1.5 tbsp light soy sauce, 1 tsp salt, 1 tbsp honey, and 1 tbsp white vinegar (or juice of 1 lime—yellow lemons aren't sour enough) until well combined;
2.Heat 1 tbsp sesame oil in a pan, add crushed dried chili peppers, and stir-fry over low heat until fragrant. Remove from heat and mix in minced garlic;
3. Combine steps 1 and 2 thoroughly to make the marinade;
4. Place the smashed cucumbers into the marinade and refrigerate for at least 2-3 hours;
5.Arrange the pickled cucumbers on a plate and sprinkle with roasted peanuts.

1: Honey is key—substituting honey for sugar creates a uniquely sweet, fragrant flavor.
2: Use white vinegar because it preserves the cucumbers' vibrant green color during pickling.
3: Fry chili oil in sesame oil over low heat in a cool pan. This better releases the chili's aroma. Avoid overheating, as it will burn the chili flakes.

Ingredients: 3 eggs, 1 cucumber section, 1 carrot
Method
1. Peel and thinly slice the carrot. Scrub the cucumber with salt to clean, then slice thinly. Heat oil in a pan and stir-fry the carrot slices until softened.
2. Crack eggs into a large bowl, add 2 drops of cooking wine and a pinch of salt, then whisk thoroughly. Push carrots to the side of the pan and pour in the egg mixture.
3. Once the eggs begin to set, add cucumber slices and stir-fry briefly.
4. Season with salt to taste.
