Some people buy large quantities of eggs at once, but remember: eggs spoil easily. III. Key Considerations for Egg Storage
1.Do not store eggs horizontally. Fresh eggs have thick, viscous albumen that effectively anchors the yolk in the center. Over time, especially in warmer temperatures, the albumen mucus gradually loses moisture due to protease activity, diminishing its ability to hold the yolk in place. If eggs are stored horizontally at this stage, the yolk—being less dense than the albumen—will float upward toward the shell, causing it to stick. Therefore, eggs should not be stored horizontally.
2. Avoid repeatedly moving eggs stored in the refrigerator.
Especially during hot weather, eggs taken out of the refrigerator should be consumed promptly and not returned. Repeated exposure to cold and heat causes tiny water droplets to form on the shell surface, allowing bacteria to adhere. Refrigerating them again allows bacteria to multiply and penetrate the egg, causing spoilage.
Next time you see discounted eggs, you won't need to worry about buying too many and them going bad. With proper storage methods, eggs can keep for quite a while. However, like any food, freshness is always best. So whenever possible, avoid storing eggs for too long.
