How long should eggs be boiled?

Scottish-Style Fried Egg
1 egg, honey, pork floss, breadcrumbs (as needed).
Method: Boil egg until cooked, peel, coat with breadcrumbs, drizzle with honey, coat with pork floss, coat again with breadcrumbs. Fry in oil until golden brown, then remove. This is the delicious Scottish-style fried egg.
Chengdu Egg Soup
4 eggs, 50g rehydrated wood ear mushrooms, 100g Chinese broccoli, 4g salt, 75g lard, 2g MSG, 1000g rich white broth.
Method: Crack eggs into a bowl and whisk vigorously. Rinse wood ear mushrooms. Heat lard in a soup pot over high heat. Pour in eggs and fry until lightly golden on both sides. When eggs are soft, break them apart with a spoon. Add broth, salt, wood ear mushrooms, Chinese cabbage, and MSG. Bring to a boil, then drizzle with lard before serving.
Bamboo Fungus and Quail Egg Soup
20 quail eggs, 50g bamboo fungus. Seasonings: 10g salt, 6g MSG, 1g ground pepper, clear broth as needed.
Method: Rinse bamboo fungus in cold water, then soak in warm water until plump to remove sand. Halve, trim pointed ends, and cut into 3cm sections. Blanch in boiling water. Crack eggs into a large bowl of cold water.Bring water to a boil in a wok over high heat, then remove from heat. Immediately pour in the quail eggs and gently simmer until heated through before removing. In a separate pot, bring clear broth to a boil. Season with salt, pepper, MSG, and bamboo fungus. Return the quail eggs to the broth and pour the broth over them to serve.
Is egg yolk or egg white better?
Both egg yolks and whites contain high-quality protein with excellent digestibility. However, their other nutritional components differ significantly: egg whites are primarily composed of ovalbumin, while egg yolks are rich in not only yolk phosphoproteins but also fats and micronutrients (vitamins and trace elements), particularly iron, phosphorus, and vitamins A, D, E, and B complex.
For infants under 1 year old and over 4 months old, egg yolks are recommended. Start with about 1/4 of a yolk and gradually increase to 1–1.5 yolks as tolerance develops. Children over 5 years old can begin eating whole eggs. Some children may experience allergic reactions to eggs, primarily due to an allergy to ovalbumin. In such cases, avoid egg whites and even whole eggs initially. Later, gradually introduce small amounts of egg yolk to achieve desensitization.However, for the vast majority of children, eggs—especially egg yolks—are packed with nutrients that benefit growth, physical development, brain and nervous system maturation, and cognitive enhancement. Their consumption should not be neglected; aiming for one egg daily is ideal.
