The workshop's owner, Li Jinshang, born in 1868, hailed from Yongli Village, Qibao Town, Xinhui, Guangdong. Orphaned at a young age, he and his mother, Cai, relied on farming for survival.After standing up to local bullies and landlords, he faced persecution and fled his hometown. He eventually settled in Nanshui, Zhuhai—a small island in the Pearl River Estuary renowned for its oyster production. To make ends meet, Li opened a small teahouse where he cooked and sold oysters.
One day, while preparing oysters as usual, Li Jinchang stepped away to attend to other tasks and forgot to tend the fire. After a long while, an intense aroma wafted through the air. Rushing back, he thought, "Oh no, they must be burnt!"Lifting the lid, he discovered a thick, dark brown, viscous liquid settled at the bottom of the pot. Its rich aroma was irresistible. He casually scooped a bit into his mouth and tasted it, finding it incredibly delicious.
Thus, quite by accident, a new condiment—oyster sauce—was invented! Truly, "unintended efforts yield unexpected results," and "it came without any effort." Seizing this fortunate opportunity, Lee Kum Sheung had a flash of inspiration. He began boiling down this novel condiment specifically for sale, formally establishing Lee Kum Kee Oyster Sauce Factory in 1888.
