Carrots are a treasure, commonly called "little ginseng." Yet many kids dislike them, finding them unpalatable. Today we'll share several delicious carrot recipes.
Carrot and Potato Shredded Pancakes
Ingredients:
Potatoes, carrots, flour, salt, pepper, eggs
Method:
Peel the potatoes, grate them into shreds, and soak in cold water to prevent oxidation and discoloration. Grate the carrots as well, then combine with the drained potato shreds. Add salt and pepper, mix well, and let marinate briefly.
Stir in 4 tablespoons of flour (omitting flour makes the patties difficult to shape) and one beaten egg.Note: "tablespoon" refers to a standard cooking spoon (1 tablespoon = 15ml). The flour acts as a binder—add it gradually. Stop adding once the mixture holds its shape. Less is better than more for optimal flavor!
Heat oil in a skillet, swirling it to coat the bottom evenly and prevent sticking.Then use chopsticks to pick up a portion of the carrot-potato mixture and place it in the pan.
Frying Carrot Balls
Ingredients: Carrot, egg, chopped scallions, flour, salt,
Method:
Wash and peel the carrot, then shred it finely. Sprinkle with salt and let sit for 20 minutes to draw out moisture.
Add chopped scallions, egg, and flour. Mix well.
Heat oil in the pan. Scoop the mixture into balls and fry until golden brown.
Craving-Worthy Snack [Carrot Candy]
Ingredients: Carrots, rock sugar, Tupperware stainless steel cookware
Instructions:
1. Peel carrots, remove ends, and cut into strips.
2. Add carrots and rock sugar to preheated pot. Stir-fry until sugar melts and carrots soften.
3. Simmer over low heat to slowly dry the carrot strips. Rinse the pot 2-3 times during cooking to prevent sticking. The entire drying process takes about 2 hours.
4. The dried carrot strips will be coated with a layer of sugar frosting. Your carrot candy is ready.
