Ingredients: 10 white peppercorns, 500g beef brisket, 1 cardamom pod, 1 sand ginger, 3 large ginger slices, a pinch of cilantro, salt to taste (serves 2-3)
Cooking Method:
Rinse beef brisket, blanch to remove scum, then drain and cut into small pieces. Lightly crush cardamom pod and amomum fruit. Place white peppercorns, beef brisket, cardamom, and amomum into a pot of boiling water. Simmer for 15 minutes, then reduce heat and cook for 2 hours until beef is tender. Season with salt to taste and garnish with chopped cilantro.
Soup Notes:
Beef brisket has a stronger warming nature than pork tripe, making it more suitable for cold winter months. While beef brisket is relatively fatty, which might seem undesirable ordinarily, this layer of fat actually provides warmth after consumption during cold winters. It also helps moisturize the skin and lips.In fact, blanching the beef brisket reduces its greasiness. As long as you don't overindulge in the meat or soup, there's no need to worry about its impact on blood lipids. Adding cardamom and sand ginger not only enhances flavor and warms the stomach but also regulates qi. Since beef brisket can be heavy and prone to indigestion, these spices aid the spleen's digestive function in the middle jiao, making the dish more suitable for the whole family.
