Many people don't know what a sea hare is. Sea hares also have four legs—short front legs and long hind legs—along with two adorable large ears. They hop along as they move. Are sea hares a type of rabbit?In fact, sea hares are marine creatures with numerous species, many of which are common on dining tables. Their high nutritional value makes them a premium seafood delicacy. To savor their flavor, food enthusiasts have developed various culinary methods.
Braised Sea Hare in Sauce
1. Rinse fresh sea hare thoroughly and set aside.
2. Fill a pot halfway with water. Bring to a boil, then add the sea hare. Blanch briefly until the sea hare unfurls, then remove.
3. Rinse under cold running water, drain thoroughly, and set aside.
4. Prepare star anise and Sichuan peppercorns. Chop cilantro, scallions, and red chili peppers into sections.
5. Heat a wok over high heat. Add a small amount of oil, then stir-fry star anise and a pinch of Sichuan peppercorns until fragrant.
6. Add one tablespoon of Pixian chili bean paste and stir-fry.
7. Add chopped red chili peppers and scallion segments, stir-fry briefly. Add drained sea slugs and stir-fry.
8. Add one tablespoon of Donggu soybean paste, stir to combine. Add a splash of steamed fish soy sauce, a splash of dark soy sauce, and half a teaspoon of MSG. Stir until evenly mixed, then remove from heat.
9. Finally, garnish with cilantro and red chili peppers. Braised Sea Hare in Sauce is ready!
Cold-Tossed Sea Hare
Ingredients: 500g sea hare, 50g each green and red bell peppers, a few scallion segments, seasonings: 1/2 tsp salt, 1/2 tsp MSG, a little minced garlic, a dash of chili oil, 1 tsp scallion oil, 1 tsp aromatic vinegar.
Method
1. Remove skin and intestines from sea hare, rinse thoroughly. Bring water to boil in wok, blanch sea hare briefly, remove and rinse under cold water. Cut into sections.
2. Dice green and red peppers, blanch in boiling water, then rinse under cold water. Combine sea hare, peppers, and seasonings, toss to coat evenly. Plate and serve.Stewed Sea Hare with Small Fish and Shrimp Ingredients: Yellow croaker, small river shrimp, sea hare, cilantro, scallion segments, salt, MSG, sugar, cooking wine, rice vinegar, ginger, garlic, cornstarch.
Method
1. Rinse yellow croaker, trim shrimp antennae and legs, and wash sea slugs.
2. Heat wok with salad oil. When oil reaches 60-70% heat, fry yellow croaker until golden brown; remove.
3.Leave a little oil in the wok, stir-fry ginger and garlic, add yellow croaker, splash with cooking wine, add a suitable amount of broth, bring to a boil, add salt, MSG, and a little sugar, then add small river shrimp and sea hare. Once cooked, thicken with wet starch, drizzle with clear oil, sprinkle with cilantro and scallion segments, and it's done.
