Kudzu Root, Chinese Yam, and Pigeon Soup
Ingredients: 500g kudzu root, 250g Chinese yam, 1 carrot (approx. 150g), 1 corn cob (approx. 150g), 10 water chestnuts, 200g sugarcane, 750g pigeon.
Method: Rinse the pigeon and cut into large pieces. Blanch briefly in boiling water, then rinse to remove blood residue. Wash the kudzu root (no need to peel) and slice thickly. Peel and wash the Chinese yam and carrot, then cut into thick chunks. Remove husks and silk from the corn, wash, and cut into 6 crosswise sections. Peel the water chestnuts. Wash the sugarcane and cut into small strips.
Place all ingredients into a clay pot, add 3 liters of water. Bring to a boil over high heat, then reduce to low heat and simmer for 1.5 hours. Season to taste before serving.
