Method: Peel and wash winter melon, cut into long strips. Blanch in boiling water, then drain.Heat oil in a wok until 60% hot. Add scallion segments and ginger slices to stir-fry briefly, then remove. Add dried scallops and stir-fry. Pour in broth and bring to a boil. Reduce heat to low and simmer for 5 minutes. Add winter melon chunks and cook until tender. Increase heat to high. Season with salt, MSG, and cooking wine. Thicken with wet starch slurry, stir-fry evenly, then plate.
