Remove knuckles, blanch in boiling water, then drain. Bring fresh water to a boil. Add white kidney beans, pork knuckles, cooking wine, and ginger slices. Boil vigorously for 20 minutes, then reduce heat to low and simmer for 1.5 hours. Season with salt before serving.
