90g warm milk, 150g low-gluten flour, 1g baking soda, 3g salt, 4g yeast, 30g unsalted butter, scallions to taste.
Method:
1. Dissolve yeast in warm milk and let sit for a few minutes.Soften butter at room temperature beforehand;
2. Knead all ingredients except butter into a dough. Gradually incorporate softened butter until smooth and non-sticky;
3. Lightly flour work surface. Roll dough into a 3mm-thick sheet. Use cookie cutters to shape desired forms;
4.Line a baking sheet with foil and arrange the cut dough pieces on it, leaving space between them;
5. Prick the dough pieces with a fork, lightly spray the surface with salt water, cover with plastic wrap, and let rise for 10 minutes;
6. Preheat the oven to approximately 200°C (392°F) on the upper rack. Once browned, turn off the power and continue baking using residual heat.(This is the original recipe's temperature. My "Midea 25L" oven only requires 150°C.)
