The second step is understanding the proper usage for each type of pot. Only when the right pot is used can health concerns be minimized.Over time, iron pans naturally develop a glossy surface layer, effectively mimicking non-stick properties. Hexavalent chromium is classified as a harmful chemical substance and is internationally recognized as a carcinogenic metal.Stainless steel is not entirely rust-proof; prolonged contact with acids or alkalis can cause chemical reactions. Therefore, stainless steel containers should not be used to store salt, soy sauce, soup, etc., for extended periods. They are primarily suitable for simmering traditional Chinese medicine. Avoid aluminum cookware whenever possible. Aluminum pots excel in heat distribution and are lightweight. However, improper use can cause significant aluminum leaching. Long-term excessive aluminum intake accelerates human aging.Aluminum cookware is unsuitable for high-heat stir-frying. High temperatures or metal utensils colliding with or scraping against the pan during cooking can release aluminum components. Nonstick Pans Should Not Be Used for High-Temperature Frying
The coating on nonstick pans is essentially a thin film, approximately 0.2 millimeters thick. Dry heating or oil temperatures exceeding 300°C can damage this film. Generally, stir-frying temperatures do not reach 260°C, but frying foods can exceed this threshold.Therefore, nonstick pans should not be used for deep-frying. Additionally, avoid using metal spatulas when stir-frying in nonstick pans to prevent coating damage. What to do if you accidentally scorch the pan
1. Tomatoes
Select a few less-than-perfect tomatoes, place them in the pan, and simmer. The scorched residue will gradually loosen and peel off. A simple rinse afterward will suffice.
2. White Vinegar or Tea Leaves
Pour half a bowl of white vinegar (or some tea leaves) into the burnt pan, add water, and boil for about three to four minutes. After boiling, let the pan sit for about five minutes, or wait until the water cools slightly. You'll find the burnt layer peels off in one piece. Finally, give it a quick rinse.
3. Beer and white liquor
Pour a small amount of white liquor and beer into the pan with a little water, mixing in a 1:1:0.5 ratio. Cover the pan and let it sit for about 5 minutes. After this, it will be easy to scrub clean.
4. Salt
Place the pan on the stove and dry-heat it over low heat until it begins to smoke. Sprinkle some salt inside, swirl it around for one minute, then turn off the heat. Scrub with a scouring pad to remove all residue without leaving any burnt smell.
