Method 2: For fresh spotted bamboo shoots, first boil in hot water for several minutes, then rinse under cold water. Before eating, blanch again. Then stir-fry with meat or prepare in a dry pot. Generally, red bamboo shoots should be boiled first, then soaked in water for a day. Slice or shred, blanch, stir-fry with fatty pork, and add an appropriate amount of sugar.
Method 3: For freshly cut bamboo shoots, slice them first, then soak in water for a day or half a day, changing the water 2-3 times. Drain, place in a pot, cover with water, and boil for a few minutes. Taste to check for bitterness. If still bitter, drain and soak in cold water for several hours until the bitterness subsides.

1. Choose shoots without knots; they are fresher, more tender, and less bitter.
2. Test tenderness by gently pressing the cut surface with your fingernail. Easier indentation indicates greater freshness and tenderness.
3. Bamboo shoots without green tips are more tender and less bitter.
4. Prefer shoots with larger diameters at the base; stouter, slightly curved bodies are ideal.
5. For mature bamboo shoots, select those with white flesh and bright yellow tips—avoid greenish ones.
6. To avoid unscrupulous sellers bleaching bamboo shoots with chemicals for better appearance, check the cut surface of the shoot tip: a slippery feel indicates possible chemical treatment. Also, smell the cut surface for any strange odors or unnatural fragrance.
