Chicken
Microwaving chicken for reheating fails to heat it evenly throughout. Since chicken has a higher protein density than other red meats, microwaving causes uneven protein breakdown, potentially leading to digestive discomfort.Particularly when wrapped in foil without oxygen, they become prone to botulism growth, potentially causing diarrhea after consumption. While nitrates themselves are non-toxic, they can convert into carcinogenic nitrosamines, significantly increasing cancer risk. Green Vegetables Green vegetables are the most common stem-and-leaf vegetables, rich in water-soluble vitamins like vitamin C, B vitamins, and carotene. Similar to spinach, vitamin C loss is highest during initial heating, with further waste occurring during storage and reheating.Additionally, during storage, microbial activity in leafy greens can produce nitrites.
Therefore, leafy greens are best consumed immediately after stir-frying. Opt for quick stir-frying and avoid prolonged boiling or extended storage.
Eggs
Eggs offer exceptional nutritional value. Their protein contains amino acids in proportions ideal for human needs and is highly absorbable, with a human absorption rate exceeding 98%.However, the absorption and digestibility of eggs' nutrients vary with cooking methods. Steamed or boiled eggs offer the highest absorption rates. Longer heating times reduce absorption and digestibility while increasing the loss of B vitamins in the yolk. Particularly with braised eggs, prolonged heating causes the protein to become tough and difficult to digest, potentially leading to indigestion.
Cabbage
Vegetables like cabbage, cauliflower, and broccoli are rich in vitamin C, B vitamins, and vitamin A. To preserve nutrients, they should be stir-fried quickly, blanched, or cooked in a hot pot. Reheating causes significant nutrient loss due to high temperatures, prolonged cooking times, and lack of moisture protection.
Additionally, cold salads are not recommended for packed lunches, especially overnight. Due to higher contamination risks during preparation, cold salads may spoil even when refrigerated overnight. Therefore, avoid packing leftover cold salads. A special note: high-fat foods should also be avoided.
