How long should steamed buns be cooked?
Many people enjoy making their own steamed buns for peace of mind. However, most are unsure of the ideal steaming time, often relying on guesswork. This approach often results in buns with subpar texture.Too little time leaves the filling undercooked, while too long causes them to collapse. So what's the ideal steaming time?
After wrapping the buns and placing them in the steamer, let them proof for over two hours. Proofing is complete when the dough has expanded. The actual steaming time is quite short—just 17 to 18 minutes is sufficient.Steaming meat-filled buns typically takes a bit longer than plain ones, around 20 minutes.
One more important tip: After steaming, never rush to open the lid. Let the steamer sit on the turned-off stove for 5 minutes, then remove it from the heat for another 3 minutes before lifting the lid.

Fresh Meat Buns
Ingredients: Dough: 500g all-purpose flour, 5g yeast, 250g water, 50g sugar, pinch of salt;
Filling: 500g ground pork, 65g soy sauce, 1 scallion, white pepper to taste, minced ginger to taste;
Method:
1. Mix filling ingredients thoroughly, then refrigerate;
2. Combine dough ingredients, knead into smooth dough, and let rise for 40-50 minutes;
3. Divide risen dough into 50g portions, let rest for 10 minutes;
4. While resting, remove filling from refrigerator and divide into 40g portions;
5. Roll each dough portion into a ball, then flatten into a round disc with rolling pin, keeping center slightly thicker;
6. Wrap filling inside dough;
7. Let rise for about 30 minutes;
8. Place in steamer basket and steam for 20 minutes once steam is generated;
9. After turning off the heat, do not open the steamer immediately to prevent the buns from shrinking—wait one minute before lifting the lid;
10. Hot, steaming buns are ready!
Tips for Steaming Buns
1. All-purpose flour is the standard flour used for dumplings;
2. Instant yeast is the key ingredient, such as Angel Yeast;
3. Adding sugar or sweet rice wine when dissolving yeast is because sugar is the yeast's preferred food source, promoting better dough fermentation;
4. Use lukewarm water for dissolving yeast, as warm water aids fermentation. Water must not be too hot (below 40°C/104°F), otherwise it will kill the yeast and render the dough unusable;
5. Gradually add the yeast mixture while stirring continuously to ensure even distribution throughout the dough;
6. If the dough feels too wet or sticky during mixing, don't hesitate—add a suitable amount of corn oil to eliminate stickiness. Overly dry dough will result in tough steamed buns;
7. Since the dough is soft and easy to knead, work it until smooth (about 3-4 minutes);
8. When proofing under a cover or plastic wrap, if the room has air conditioning, you can place it outdoors for faster proofing (40-45 minutes). However, avoid direct sunlight. Proof until the dough doubles in size.Typically, dough won't sour within 4 hours. However, in summer heat or warm environments, it may over-rise. If this occurs, dissolve a small amount of baking soda in water and knead it into the dough. Let it rest briefly after mixing.
