Pressing the fingertip firmly against the cut surface creates a slight tacky sensation upon removal, feeling oily and smooth with no off-odors. Water-injected meat, containing excessive moisture, releases bloody water upon touch and lacks this tackiness.
Paper Test: First, the burning test. Place clean absorbent paper on the fresh cut surface of the meat, then peel it off after a moment. For normal meat, the paper peels off intact, showing oil that ignites and burns completely. For water-injected meat, the paper does not peel off intact, shows water, and either fails to ignite or burns incompletely. Second, the water absorption test.Place a small piece of tissue paper on the fresh cut surface. Water-injected meat absorbs moisture rapidly, saturating the paper upon contact, while normal meat allows moisture to permeate gradually.
Experiment to Identify Water-Injected Beef:
Take one piece of water-injected beef and one piece of non-injected beef. See if a single tissue paper can distinguish between them.
Beef A (Water-Injected Beef)
Step 1:First, lay the tissue paper over Beef A (the surface of the water-injected beef).
Step 2: Observation reveals distinct dampness. The tissue surface appears as if coated with water, completely saturated (this may not be water but could be oil).

Step 1: Cover beef B with paper towels and pat it several times with your hand.
Step 2: After patting, the paper towels show partial dampness in some areas, making it unclear whether it's water or oil. Slowly peel off the paper towels; they remain intact.
Step 3: Remove the paper towels and gently stretch them.
