【Ingredients】6g white fungus, 12 pigeon eggs, 15g walnut kernels, 60g water chestnut starch, sugar to taste.
【Preparation】
① Soak white fungus in warm water for 1 hour, rinse away impurities, place in a bowl, add water, and steam for about 1 hour. Boil pigeon eggs in cold water until cooked, transfer to cold water to cool, peel, and place in a bowl. In another bowl, mix water chestnut starch with water to form a smooth paste.Soak walnut kernels in warm water for 30 minutes, peel, drain, deep-fry until crisp, then chop into rice-grain sized pieces.
② Place an aluminum pot over heat, add water, pour in the liquid from steaming the silver ear mushrooms, add the water chestnut starch mixture, sugar, and walnut kernels. Stir until well combined into a walnut paste, then ladle into soup bowls.
③ Arrange the silver ear mushrooms around the edges of the bowls, then place the 12 pigeon eggs around the silver ear mushrooms to complete the dish.
