Bean curd sticks boast a unique texture, pairing richly with meaty flavors while complementing the freshness of vegetables. High in protein, they're often called "vegetarian meat" and are a healthy food suitable for all ages. Their versatility shines in braised dishes, stir-fries, cold salads, and soups—each preparation offering distinct flavor. Though nutritious, how do you select quality bean curd sticks?When selecting dried tofu skin, pay attention to four key points:
Step 1: Check the color. The best dried tofu skin has a wheat-yellow hue with a slight sheen. Lower-quality varieties often appear grayish-yellow or dark brown with a dull color. Some may even show uneven coloring with varying shades, indicating inferior products.
Step 2: Examine the appearance.High-quality tofu skin reveals thin, fibrous strands resembling lean meat when held to light; inferior products lack this texture. Examine the cross-section (break loose pieces to observe) – honeycomb-like, hollow structures indicate superior quality.
Step 3: Smell the aroma. Made from soybeans, good tofu skin carries a natural bean fragrance.Odorless tofu skin indicates slightly lower quality. Avoid purchasing if it emits other odors, such as bitterness, sourness, or pungent smells.
Step 4: Soak in water. After purchasing, break off a small piece and soak it in water. If the soaking water turns pale yellow without cloudiness, the quality is good.
High-quality dried tofu, when soaked in warm water, exhibits some elasticity when gently pulled and can be torn into fine strands. Finally, note that the soaking water should be lukewarm in winter and cool in summer to preserve its integrity. Dried tofu soaked in hot water becomes extremely brittle.
