Silver ear mushrooms are a valuable ingredient, but the ones we commonly encounter are dry and hard. Therefore, the most crucial step before consuming them is proper rehydration. How should silver ear mushrooms be soaked? It's important to note that cold water should be used for rehydration. So, what are the methods for preparing silver ear mushrooms in water?
How to Soak Silver Ear Mushrooms
Rehydrating silver ear mushrooms is relatively straightforward.First, soak the silver ear mushrooms in cold water for three to four hours. Then, remove any impurities from the root base and rinse thoroughly with clean water several times. Before cooking, soak them in water again, placing the mushrooms root-side up to ensure they are fully submerged. Let them sit like this for about half an hour.
Many households use hot water to soak silver ear mushrooms because it speeds up the process, allowing for quicker use—a method favored by some homemakers. However, this hot-water soaking method is not recommended. It reduces the volume of the mushrooms when expanded and compromises their texture, making them sticky and soft. Before cooking, soak the silver ear mushrooms in lukewarm water for about an hour until fully rehydrated. Remove the base and any impurities, then tear into small pieces for steaming, boiling, or stewing. The correct method is to soak them in cold water (lukewarm water in winter). After soaking, discard any unopened parts, especially those with a pale yellow color.
Tips for Preparing Silver Ear Mushrooms:
1. Soak silver ear mushrooms in boiling water. After soaking, remove any unsoaked parts, especially those with a pale yellow color. 2. Choose slightly yellowish silver ear mushrooms for better texture. Chilled sweet desserts made with them taste even better when served cold from the refrigerator.
3. Discard spoiled silver ear mushrooms to prevent food poisoning.
4. Avoid storing cooked silver ear mushrooms for extended periods.
5. Primarily used in sweet dishes, especially soups; rock sugar silver ear desserts are high in sugar and should not be consumed before bedtime to prevent increased blood viscosity.
6. As a dietary fiber-rich weight-loss food, snow fungus pairs exceptionally well with papaya—known for its breast-enhancing properties—when stewed together, creating an ideal beauty and wellness tonic.
However, note that rehydrated silver ear mushrooms should be cooked in one batch. Leftovers should not be refrigerated, as this causes significant nutrient loss. Cooked silver ear mushrooms should also not be stored for extended periods. Under bacterial decomposition, the nitrates they contain can be reduced to nitrites, which are harmful to the human body. Therefore, no matter how delicious, silver ear mushrooms should not be consumed after being left overnight.
