How Microwave Ovens Work
Simply put, microwave heating works like this: When microwaves hit food, the food contains water molecules. Water is made of polar molecules (molecules where the positive and negative charges don't align, even without an external electric field). These polar molecules reorient themselves in response to the microwave field.This movement of polar molecules in food, combined with interactions between adjacent molecules, creates a friction-like effect that raises the temperature of the water. Consequently, the temperature of the food also increases. Food heated by microwaves is heated uniformly throughout its interior, achieving rapid temperature rise. Operating at a frequency of 2.45 billion cycles per second, microwaves penetrate 5 cm into food to accelerate molecular motion.
Microwave Heating: Is It Carcinogenic?
Since microwaves are a form of radiation, many people naturally assume they are carcinogenic.Microwaves are a type of electromagnetic wave, fundamentally the same as radio waves used in radios and telegraphs, infrared rays, and visible light. Their only difference lies in frequency. Microwaves have a higher frequency than radio waves but lower than infrared rays and visible light. Since radio waves and visible light are not carcinogenic, it follows that microwaves, with frequencies between them, are also not carcinogenic.In fact, the term "radiation" here refers only to the energy emitted by microwaves, which is fundamentally different from the radiation produced by X-rays or radioactive isotopes. While X-rays are also electromagnetic waves, their frequency is much higher than microwaves, giving them greater energy. Radioactive isotopes, meanwhile, emit particles during their decay process, which is why they can cause cancer in living organisms.
Microwaves do not cause cancer in humans nor do they create carcinogens in food. In fact, they may even help prevent carcinogen formation. For foods like fish and meat, traditional heating methods—especially grilling and frying—can easily char the surface, producing certain carcinogens.
Is Microwave Radiation Safe?

Scientists have conducted extensive research to determine the minimum microwave power that can harm humans. A properly functioning microwave oven emits microwave power far below levels harmful to humans—U.S. regulations stipulate that at a distance of about 5 centimeters from the oven, the power density must not exceed 5 milliwatts per square centimeter. China's standards are even stricter, limiting it to 1 milliwatt.Moreover, microwave energy diminishes with the square of the distance. This means that if 1 mW is measured at 5 cm, it drops to 0.01 mW at 50 cm—rendering it completely harmless to humans and animals.
Therefore, as long as a microwave oven is a certified product and remains undamaged during use, it will not leak microwaves capable of harming the human body.
