Excessively Hot Foods
Consuming extremely hot foods is a major cause of digestive tract tumors, including esophageal cancer.Consuming excessively hot food damages and irritates the esophageal mucosal epithelium. Prolonged irritation can induce malignant tissue transformation. The significantly higher incidence of digestive tract tumors among Chinese people compared to Westerners is linked to the Chinese preference for hot meals—often accompanied by hot soups like vegetable broth or thickened sauces at every meal. In contrast, Western diets are simpler, typically featuring fewer hot soups and more cold beverages like fruit juices or cola.
Excessive Consumption of Warm-Heat Foods
"Warm-heat foods" refer to two categories: first, foods that are directly perceived as excessively hot or scalding; second, foods classified as warm-heat in nature according to traditional Chinese medicine. Due to their excessive pungent-heat properties, these foods readily damage the mucosal epithelial cells of the digestive tract, making them most likely to induce tumors in the digestive system.
Warm-natured foods
1. Alcohol possesses pungent-heat properties. Chronic alcohol consumption is the most common factor in digestive system tumors. The high incidence of esophageal cancer in southwest Shandong correlates with the region's preference for hot foods and heavy drinking. As early as 1964, the World Health Organization recognized excessive alcohol consumption as linked to oral, laryngeal, and esophageal cancers.A study comparing Tongxing Township (high incidence) and Xining Township (low incidence) in Qidong County, Jiangsu Province revealed a 2.5-fold higher liver cancer mortality rate in the former. Despite being separated by only a road, sharing similar natural environments, and comparable smoking rates, residents in the high-incidence area preferred alcohol while those in the low-incidence area favored tea.
2. Similarly classified as "hot" foods in traditional Chinese medicine are fried, deep-fried, and smoked/grilled items. These foods acquire a "hot" nature due to high-temperature frying and roasting. Research confirms that long-term consumption of such foods increases susceptibility to stomach cancer, intestinal cancer, and liver cancer.
Coffee
Just as Chinese people favor tea, Westerners often prefer coffee. After a five-year epidemiological study, American scholars concluded that caffeine may influence the development of pancreatic and bladder cancers. Regular coffee drinkers face a 2–3 times higher risk of these cancers compared to non-drinkers. At least half of pancreatic cancer cases are attributed to excessive coffee consumption.
Imbalance of Five Flavors
Traditional Chinese medicine advocates harmonizing the five flavors—sweet, bitter, sour, pungent, and salty—in one's diet. Excessive consumption of any single flavor can lead to disease. Among tumor-inducing factors, excessive intake of rich, greasy, and fatty foods, along with excessive saltiness, are common culprits.
Excessive Consumption of Rich, Greasy, and Sticky Foods
In TCM, rich, greasy, and sticky foods refer to sweet and oily items. Clinical studies show that excessive intake of sweet foods—starchy and sugary items—can lead to gastric cancer. Overconsumption of high-fat foods like fatty meats and oils can trigger breast cancer, colon cancer, rectal cancer, and pancreatic cancer.From a TCM perspective, tumors fall under the category of "accumulation syndromes." The Huangdi Neijing defines accumulation syndromes as stagnation of body fluids and blood stasis. Consuming rich, greasy foods readily promotes dampness and phlegm production, undoubtedly exacerbating the accumulation of these pathological substances.
From a modern medical perspective, frequent consumption of high-fat diets stimulates the liver to secrete more bile. Once in the intestines, primary bile acids in bile are converted by anaerobic bacteria into deoxycholic acid and cholic acid. Both of these substances are carcinogens that can cause intestinal mucosal cancer. Simultaneously, fat provides a suitable growth environment for various tumors.
Excessive Saltiness
Beyond table salt, salty foods include pickled vegetables, salted fish, cured meats, and other preserved items.Research indicates that regular consumption of pickled foods increases the risk of esophageal cancer by 2.79 times compared to infrequent eaters. The most common cancer associated with a salty diet is stomach cancer. Japanese fishermen who frequently consume salted fish exhibit high rates of stomach and esophageal cancer. Salted fish consumption is also a significant factor in nasopharyngeal cancer.Malaysian researchers found that coastal residents have higher rates of nasopharyngeal cancer, linked to their preference for salted fish. Chinese census data confirms that in high-incidence areas for stomach cancer, per capita daily salt intake reaches 50 grams, while in low-incidence areas, it is only about 6 grams.
In reality, salt itself is not carcinogenic. The cancer-causing mechanism stems from high-concentration salt solutions damaging the protective layer of the gastric mucosa, leading to mucosal erosion or ulcers. Under such conditions, exposure to carcinogens can trigger localized cancerous changes in gastric mucosal cells. Salt is an essential substance for the human body, but excessive consumption must be avoided. It is generally recommended that daily salt intake for healthy individuals be kept below 6 grams.
Pickled Foods
Nitrites are also recognized carcinogens. Vegetables, fresh meat, and other foods undergo pickling processes that generate significant amounts of nitrites.
Nitrosamines are present in salt-cured dried fish, fermented pickles, kimchi, sauerkraut, leftover cooked cabbage, sausages, and meats. Regular consumption of these foods carries a cancer risk.
Consuming Spoiled or Moldy Foods
Aflatoxins are recognized as potent carcinogens. The mold Aspergillus flavus thrives in warm, humid conditions and is abundant in moldy grains, corn, and peanuts. Studies show it induces various tumors in laboratory animals. This factor significantly contributes to high cancer rates in certain regions of Asia and Africa.
