Can duck eggs be used to make cakes? This question warrants discussion. While chicken eggs are traditionally used for baking, duck eggs are significantly larger and nutritionally richer. Why then do few attempt to create delicious cakes with them? Can duck eggs truly be used for cakes?
In fact, duck eggs carry several dietary contraindications, which is precisely why they are rarely used in cake-making. Firstly, duck eggs are unsuitable for long-term consumption by middle-aged and elderly individuals. Secondly, children should also avoid excessive intake.
1.Middle-aged and elderly individuals should avoid frequent or prolonged consumption of duck eggs. Their fat content exceeds that of protein, and they contain relatively high cholesterol levels—approximately 1522 milligrams per 100 grams. Regular, long-term consumption may accelerate cardiovascular hardening and aging in this demographic.Only prolonged high-temperature processing can eliminate these bacteria. Therefore, duck eggs must be boiled in water for at least 15 minutes before consumption. After boiling, do not remove them immediately; instead, leave them in the boiling water to cool gradually. Consuming undercooked duck eggs can easily trigger illnesses and should be avoided.This primarily stems from excessive animal protein intake. While growing children require more protein, approximately 3 grams per kilogram of body weight daily is generally sufficient to maintain protein metabolic balance. Overconsumption not only impairs gastrointestinal digestion but also produces harmful byproducts from protein breakdown, potentially causing restlessness and hyperactivity in children. Therefore, children should limit high-protein foods like eggs.
4. Contraindicated for those with spleen yang deficiency, cold-damp diarrhea, or postprandial qi stagnation with fullness and distension; avoid during illness.
5. Contraindicated for nephritis patients; cancer patients; also contraindicated for those with hypertension, hyperlipidemia, atherosclerosis, and fatty liver disease.
6. Food incompatibilities: Duck eggs should not be consumed with soft-shelled turtle, plums, or mulberries.
7. Avoid consumption while taking levodopa. High-protein foods should be avoided during levodopa treatment, as they produce large amounts of amino acids in the intestines that inhibit levodopa absorption, reducing the drug's efficacy.
8. Avoid salted duck eggs while taking antipyretic analgesics like aminopyrine, sumatriptan, or ketorolac. Salted duck eggs contain nitroso compounds. When taken with antipyretic analgesics, the aminopyrine in these drugs can react with the nitroso compounds in salted eggs to form carcinogenic nitrosamines, increasing cancer risk.
Earlier we discussed what duck eggs are. While chicken eggs are commonly used in cakes, duck eggs are rarely employed. Could we shift to using duck eggs for cakes? The answer is no. Duck eggs carry numerous dietary restrictions, especially for children who should not consume them in large quantities. As cakes are a favorite among children, it's best to avoid using duck eggs in their preparation.
