I. How to Eat Fresh Monkey Head Mushrooms
>Fresh monkey head mushrooms are spherical, white with a slight yellowish tint. From a distance, they resemble common button mushrooms. Upon closer inspection, however, they closely resemble the white sea anemones that host clownfish, covered in fuzzy tentacles.When cooking fresh monkey head mushrooms, always blanch them in boiling water to expel any yellow impurities. Slice them thinly before use. For dried monkey head mushrooms, soak them in water until softened, then blanch thoroughly in boiling water. Subsequent preparation follows the same steps as for fresh mushrooms.
II. Recipes Using Fresh Monkey Head Mushrooms
1. Braised Monkey Head Mushrooms with Beef Tendon
Ingredients: Monkey head mushrooms, beef tendon, winter bamboo shoots, ham, dried shrimp, chicken fat, soy sauce, cooking wine, sugar, MSG, scallions, ginger, lard, salt.
Method: Blanch fresh monkey head mushrooms in boiling water to expel yellow impurities, then slice. Cut tendon into sections; slice ham and bamboo shoots; dice scallions and ginger into pea-sized pieces. Briefly blanch mushroom slices and tendon sections in boiling water, then remove.Heat lard in a wok until 70% hot. Add monkey head mushroom slices and tendon pieces, stir-fry briefly. Transfer to a strainer to drain excess oil.In the same wok, add scallion slices, ginger slices, ham slices, bamboo shoot slices, dried shrimp, monkey head mushroom slices, and tendon pieces. Add cooking wine, salt, soy sauce, sugar, MSG, and water. Bring to a boil, then reduce heat to low and simmer until the sauce thickens. Drizzle with chicken fat, remove from heat, and plate.
2. Clear-Stewed Monkey Head Mushroom with Pork Ribs
Ingredients: Fresh monkey head mushroom, pork ribs, shiitake mushrooms, salt, soy sauce.
Method: Soak fresh monkey head mushrooms to remove bitterness. Rehydrate shiitake mushrooms and slice. Wash pork ribs and cut into small pieces. Place monkey head mushrooms, shiitake slices, and pork ribs in a pot with sufficient water. Boil over high heat for 30 minutes, then add salt and soy sauce.
III. How to Select Monkey Head Mushrooms
1. Check the Color
High-quality fresh monkey head mushrooms exhibit a uniformly bright, natural white color. Poor-quality specimens may show a pale yellowish-red hue, indicating they grew in an environment with excessively high temperature and humidity. If harvested too late, allowing the spores to fully disperse,the mushroom body appears dull and yellowish. Additionally, a fine powdery layer on the surface indicates the spores have fully dispersed. The mushroom feels noticeably lighter to the touch and develops a bitter taste at this stage.
High-quality dried monkey head mushrooms exhibit a golden yellow hue, resembling the fur of a golden snub-nosed monkey. Occasionally, they may display a yellowish-white tint due to the mushroom's white mycelium. However, some merchants use sulfuric acid or iodine to artificially whiten the mushrooms, resulting in an unnatural white color. This practice is harmful not only to the mushrooms but also to human health.
2. Inspect the Appearance
When selecting fresh monkey head mushrooms, prioritize specimens with large caps, short stems, long spines, and no insect damage. Only mushrooms meeting these criteria indicate full growth and optimal nutrient and moisture absorption.
Since dried lion's mane is commonly purchased, prioritize uniform size, thorough drying, absence of insect damage, and intact shape. Avoid mushrooms showing rot or wormholes.
