Once the beef bone broth comes to a boil, skim off any impurities from the surface. Add the ginger and mulberries, then continue simmering until the beef bones turn white. Finally, add the scallions and seasonings to taste, stirring well to combine.
Method: Rinse pork bones and cut into chunks; wash black beans; slice ginger. Place all ingredients in a pot, add water, bring to a boil over high heat, then reduce to low heat. Simmer until pork bones are tender before adding seasonings and serving.
Method: Tear pork skin into pieces, soak in water for 30 minutes, then rinse. Wash cabbage and cut into chunks. Beat eggs in a bowl until smooth. Bring water to a boil in a pot, add pork skin and cabbage, and simmer for 3 minutes. Pour in beaten eggs, cook for 1 minute until set, then gently stir. Season to taste before serving.
