Absolutely true! Calcium in bones simply won't dissolve easily. Experiments show that after two hours of pressure cooking, fat from the bone marrow rises to the surface, yet the calcium content in the broth remains negligible. There's only one way to make bone broth calcium-rich: add half a bowl of vinegar and simmer slowly for another hour or two.

IX. Using Lactone Tofu for Calcium Supplementation? NO!
Tofu stands as the premier plant-based calcium source. Soybeans themselves contain significant calcium, and calcium-rich coagulants are added during tofu production. Consequently, individuals who avoid milk often consciously increase their tofu intake.
However, lactone tofu is not a good calcium source because it uses glucono-delta-lactone as a coagulant instead of calcium-containing agents.
